Do you really think the weather people will get it right this time? One thing for sure - no one can afford to laugh it off and not prepare - especially if you have plants, fruit trees, or pets! Of course our pets won't be affected unless by some misfortune we lost electricity! I am always amazed though at the people in the grocery store -- several gallons of water, three or four loaves of bread and that many cartons of milk. I say a young woman with two small children last night and she had about five cartons of cold drinks - guess she was going to just keep them satisfied with cold drinks!
On cold winter mornings have you ever wished for something good and warm -- but healthy - and without a lot of trouble? I have the perfect answer and they are "tried and true!" They are called "Six Weeks Bran Muffins!" The recipe was given to me by my good friend in Ruidoso. They are supposed to last up to six weeks in the refrigerator and you only cook them as needed! Mine have never lasted over two weeks -- of course they didn't ruin - they just didn't last -- I made my family 3 or 4 a day - gave my Mom some and my sister about 1/3 of the mix. Sometimes I made some for friends that were sick and other times for the office! One neat thing I learned: I had always thought that if you had a muffin pan for six or 12 muffins, you had to cook all of them - or you would ruin your pan! NOT SO -- while visiting my friend in Ruidoso, she would cook us one each and nothing happened to her pan! A great revelation for me!!! Yea!! So - here is the recipe -- and don't tell her - but all I did to the recipe was add 1 Tablespoon Vanilla!
SIX WEEK BRAN MUFFINS
2 Cups boiling water -- Add 2 cups 100% wheat bran (could not find it, per se - so I use 2 cups of the (Kelloggs) Original All Bran - this works out great because then you use the entire box of cereal!)
Add 1-1/4 cup brown sugar; 1-1/4 cup white granulated sugar; 1 cup plus 3 tablespoons Canola oil; 4 eggs - one at a time - and 1 guart buttermilk. Mix together well in large mixing bowl.
Now - add: 6 cups flour, 5 teaspoons baking soda, 2 tsp. salt,and 4 cups Kelloggs Original All Bran. Don't forget the 1 Tablespoon VANILLA. Mix well and store in refrigerator up to six weeks.
They really need to spend one night in the refrigerator before using. Then spray the pan ( however many you plan to cook), dip out what you need and bake at 385 degrees for about 19 to 20 minutes. You can add nuts, raisin, dates, cranberries, etc., before baking. (I usually fill about half full - add my nuts or fruit - and then top it off with more batter!! Then - break open and enjoy!!!
So - I encourage you to try them -- you know - going that little extra mile for your special family!!
So - stay warm - be very careful - and God's will - log in again! I made Taco soup and brownies (will make the cornbread in the morning) for my office's lunch tomorrow! I will let you know if the garlic and onion I added - improved on an already awesome recipe a friend gave me several years ago!

ReplyDeleteI have a similar recipe using Raisin Bran cereal.....love it cause it has raisins in the muffins....yum!
