A BIRTHDAY WORTH REMEMBERING

What a blessed day - I woke up with a Birthday kiss - no - not Travis - but Lexie - my little black girl - the four legged one!!! We were on our way to Dallas - all bathed, shampooed, and made up by 8:30 this morning. The closer we got to Dallas - the whiter and brighter it got! It was still beautiful there - still like a winter wonderland! We had great food - Mexican at Desparado's - one of my favorite places! Then Travis and Michelle bought me some really pretty clothes and jewelry! Then we went to my very favorite store in Dallas - Penzey's -- where I bought spices for two of my friends, my sister and myself. We even posed for pictures!! I am one lucky lady!! Then best of all - we made it home safely!! God is so good!!!
I read Lee Vickery's article in the Wednesday cooking section about "What is Love!" I've posted that on my wall and will see if I get any response. If I do - I will share tomorrow! My list includes:
God is Love!! Love is giving up something special for someone else! Love is going out in the cold and filling up your car with gasoline! Love is putting drops in your love's eyes because she can't hit the eye! Love is saying you are sorry over and over if necessary! Love is saying thank you for the smallest things! Love is a sloppy stolen kiss from your favorite four-legged pet! Love is being greeted with barks and wags. Love is reaching over and grabbing someone's hand - just because! Love is a smile exchanged. Love is thinking of the same place to eat at the same time. Love is a home cooked meal cooked special just for the one you love! Love is taking you out to eat when you are too tired to cook! Love is wanting what you want first! I could go on - but I want to know what you think love is!!!!
I am not going to talk about beans tonight -- I don't think that would be appropriate - being valentines and all. I did see a valentine card for a husband and it showed 4 feet entwined and it say: "Sometimes I lay next to you and think how lucky I am and how much I love you" -- (open the card) and it says: "And sometimes I lay there and think: "I am never going to cook beans again!" Just had to share that since I've been talking about the healthy benefits of beans!
I wish there was a big posted list or a billboard of people and things that we each could go to and choose something to do or someone to help! But I think God expects us to find our own way of helping someone or doing a good deed! Let's all make sure we do this!!!

Ok - gals and guys -- it is time to reach another level of cooking! Tonight I have a valentine dish for the one you love!! It is ROAST TENDERLOIN DIANE
1/4 Cup dry white wine
1/4 cup brandy
3 Tbsp. lemon juice
2 Tbsp. snipped chives
1-12/ tsp. sat
1 Tsp. Worcestershire sauce
1/2 tsp. freshly ground black pepper (definitely Penzey's)
1 (2 lb.) Beef tenderloin
2 Tbsp. water
2 Tbsp. butter

Combine wine, brandy, lemon juice, chives, Worcestershire, and pepper. Place meat in plastic bag; set in loaf pan. Pour marinade over meat and zip the bag closed. Let stand no longer than 2 hours at room temperature or overnight in refrigerator, occasionally pressing bag against meat to distribute the marinade. Pat meat dry with paper towel. Place tenderloin on rack in shallow roasting pan. Bake at 425 degrees for 45 to 55 minutes, basting meat occasionally with about half of the marinade. In small saucepan, heat the remaining marinade, the water and butter until mixture bubbles. Slice meat and arrange on platter. Spoon sauce over meat. Serves 6! (NOW DON'T WORRY - THE ALCOHOL COOKS OUT AND JUST LEAVES A GREAT FLAVOR!) Serve with roasted potatoes (or baked) and a delicious salad.(Don't forget to season your salad bowl!!) ENJOY -- AND WATCH HIS EYES LIGHT UP!!!
