ANOTHER SUCCESSFUL NIGHT - THANKS TO MANY HELPFUL FRIENDS!

Hmmm - scary -- I hear about 10 different sirens going off and it is 9:40. I just pray it is not another apartment fire -- any fire is such a tragedy - but when the Red Cross responds to an apartment fire it always costs thousands of dollars and we just struggle with having the funds to help. There have been so many apartment and single family fires right here in Smith County so every donation is needed and used right here in Tyler, TX.
The Wednesday night meal is over and I believe based on the comments - it was a success! The fajita meat was wonderful and everything else was good! I am hoping the desserts were enjoyed!! I think I went over the amount collected but I think the people who attended would agree it was worth it! I will try to be more conservative next month!!!
I make a very simple but delicious enchilada and my sister asked if I had posted the recipe and I guess I thought it was too simple but here it is:

JC's Chicken Enchiladas

3 t0 4 chicken breasts - cooked and pulled apart in bite size pieces (or you can use a rotisserie chicken!)
1 onion, chopped
1- 2 cup pkg. shredded cheese (I like the Mexican blend)
1 pkg. tortillas (Flour works better for enchiladas)
Oil for heating tortillas
1/4 cup chicken broth
2 tsp. salt
1 tsp. black pepper (Remember Pensey's is best)
1 Tsp. Pensey's Fox Point
2 tablespoons hot sauce (such as Rose City Mild)
9 X 13 Baking dish (sprayed with Pam or such spray!)
Mix chicken with salt, pepper, Fox Point, hot sauce and a couple of tablespoons of broth. (You don't want it soggy - just soft!)
Take a skillet and put just a little oil in it - maybe 1 tablespoon and heat a tortilla - the object is to get it pliable so that it folds easily - the take that tortilla and blot it with paper towel (basically just lay it on the paper towel). Then add about 2 tablespoons chicken about 1 tsp. onion and 1 tablespoon cheese. (I don't measure these - I just grab some and put chicken, onion and cheese on each one!!) Roll up the filled tortilla (Now an Enchilada) and place seam down in prepared dish. Continue to heat tortillas (add more oil as needed) and fill until dish is full or you have made as many as you want!) Cover the top with grated cheese - and if you have it - crumble some of the great Mexican melting cheese on it! Bake at 250 degrees - just until cheese is melted and enchiladas are hot. Serve with tomatoes and lettuce. Oh - and salsa and guacamole is always a great side!!

The salsa I made for tonight was great - although most people bragged on the "Pico de galo" and that was okay with me as long as they bragged on it!!
I will give you the recipe but just not tonight. My body and my mind is tired. I chased groceries for 3 days or nights and then bought bananas this afternoon for the banana pudding. I would say the Snicker treats were the hit of the night with everyone trying them and then discussing them. I love it when something hits "the spot!"

Without them the meal would not have been ready and that would have been a disaster!
