MISCELLANEOUS THOUGHTS

I finally did it! I cooked dinner tonight -- got a little gourmet with the chicken, but reverted to old fashion when I prepared Stewed Potatoes, english peas, cornbread, and had fresh from the market cantalope and fresh from my little garden - tomatoes! Travis said he enjoyed it and it was good! Great - that is truly what I was after! I had 1/2 chicken breast, a slice of cantalope and some tomato. I've got to figure out how I can get more low, low calorie and carb veggies in my diet!
I decided I'd better cook - not many opportunities left until I leave on vacation next Tuesday.

I made a wonderful Spinach Dip for the vegetables that we had at the wedding. Try it!

SPINACH ONION DIP

1 -1/2 pouch Campbell's Dry Onion Soup and Recipe Mix
1 - 16 oz. container sour cream
10 ounces frozen chopped spinach, thawed and well drained
1/4 cup chopped toasted almonds, (Optional)

Mix soup, sour cream, spinach and almonds. Refrigerate at least 2 hours. Serve with chips or fresh vegetables for dipping.

TIP: To thaw spinach, microwave on HIGH 3 minutes, breaking apart with fork halfway through heating,
It takes lots of draining!!!

It really was good even with me making 12 times this much!!!

Also here is the punch recipe I used:

SPARKLING PUNCH

1 - 12 OZ. can frozen pink lemonade
4 cups White Grape cranberry- strawberry juice
1 quart ginger ale.

Stir together the lemonade concentrate and juice. Chill 1 hour or up to 24 hours. Stir in Ginger Ale just before serving!

This recipe makes 9 cups - and I was making like 600 cups -- but I had way too much!!

It is refreshingly good!!

I also want to add: Remember God and what he has done for us! Have a blessed day tomorrow - and please remember to tell the ones you love that you do love them and do a good deed. That is very important!!!
