GOOD EATS AND GOOD TIMES

My it seems like a month instead of 7 days -- but it has been a good week! I took my computer and sometimes the internet worked and sometimes it didn't -- and sometimes I was just too busy to stop and write but I figured you needed a break from me anyway.

My sister, Alice, Maura, Michelle and I went to Galveston and stayed at the St Luis and it is very nice and they are so unbelievably nice there! They treat everyone wonderfully!
We had some great meals while we were there -- personally I think they have the best seafood in the land unless it is when you get up in the Maryland area! At Landry's we had the most awesome appetiser. It was like 12 grilled shimp and two big helpings of something similar to guacamole - but better than any I've ever had and I've had it from lots of places! The two things different that I could detect was it had cilantro and tiny bits of jalapeno! I am going to experiment next week!!! The best meal we had was at Fish Tales and Alice and I shared the Beach Platter which was broiled and had two shrimp,two pieces of fish, 2 crab stuffed shrimp (the best ever), and two crab cakes. This was perfect for sharing and it was the most delicious seafood I've ever had! Michelle had Coconut Shrimp and Maura chose mini hot dogs! Children!!! We have learned that to go to Rain Forest Cafe - it is so much better to skip breakfast and go at eleven for "brunch!" You still get all of the sounds, light effects and fun! We again shared and had Fish tacos. The were good but a little dry! My sister had I Hop's Banana Strawbery Pancakes three days in a row for breakfast and then didn't think we should eat the rest of the day! Ha! They had fresh sliced bananas between each of the four pancakes, then topped with strawberry compote and whipped cream!

It rained all but one day --actually came torrential rains but we found lots to do and entertain ourselves with! Something we had never done before! Maura was very disappointed that we did not get to go and spend a day at the beach but she had a ball on the tunnel/slide at the swimming pool!


Now for a little cooking! Do you like Caramel Corn but think is is just too much trouble? Well here is one that is just as good - but much easier!

MICROWAVE CARAMEL CORN

1 Stick butter
1 Cup brown sugar
1/4 Cup white Karo
1/4 tsp. salt
1 tsp. vanulla
16 Cups cooked popcorn

Combine all ingredients except popcorn and vanilla flavoring in an eight cup glass bowl and microwave on HI for 2 minutes; stir and microwave for 3 additional minutes, stirring after each minute.
Add 1 tsp. vanilla, stir. Put popcorn in large brown paper bag (not a recyled bag) and pour syrup over popcorn, fold down top. Microwave 1 minute, then shake bag, microwave another minute and shake bag. Microwave 30 seconds and shake, micro another 30 seconds and shake bag. Pour popcorn in bowl, ready to eat!

Lets see -- that is a total of seven minutes vs about an hour done the old fashion way!!

How many of you are old enough to remember when the Mall had an Orange Julius in it -- I think I remember it was in some corner! Well make this and go back to the "good old days!" And if you are too young to remember it -- try it and see what you missed!

ORANGE JULIUS

1 - 6 OZ. Can Orange Juice
1 - 6 oz can water
1/3 cup sugar
1 Cup Milk (I'm sure they used whole milk back when - but I would use 1%!!)
1 tsp. Vanilla
1-1/2 cups chipped ice.

Combine all ingredients and mix well in blender!

Here is the saying for tonight -- I believe it is self-explanatory!

"Being powerful is like being a lady. If you hav to tell people you are, you aren't!" Thinking about this I would say you could replace the work Powerful with Rich!!!
