Ok girls and any guy that is wise enough to check out my blog -- let get cooking! Tonight I prepared an all veggie dinner and it was pretty awesome. I did stuffed eggplant and before you sneeze and say "I don't like eggplant" I guarantee you have never tried it this way! Then I did yellow squash, okra with onion and jalapeno, fresh tomatoes sliced, and stewed potatoes. Of course I didn't eat the potatoes because of the carbs but the rest was so good! So how did I cook all of it - well here is how:
Stuffed Eggplant
4 small eggplants
1 very small onion (or part of one)
1/8th of hot jalapeno
1 tsp. salt
1/2 tsp. pepper
1/4 cup fine ground bread crumbs
2 very small tomatoes chopped
1/8 tsp. sugar
Boil eggplants until fork tender - remove from water and allow to cool until easy to handle. Slit one side open and remove the insides. Sprinkle the inside of the hulls with salt. Combine the eggplant pulp with remaining ingredients - mixing well. Stuff with pulp mixture and place in 400 degree oven for about 10 to 15 minutes. Top with a tad of cheese on each and return to the oven for about 5 minutes! VERY GOOD!!!
ALL NATURAL YELLOW SQUASH CASSEROLE
6 to 8 small yellow squash
1 medium onion, chopped
1/8th of jalapeno
salt and black pepper to taste
1/8th tsp. sugar
Wash and cut squash into 1 inch chunks (don't measure - just guesstimate!); place in saucepan; Chop onion and jalapeno and add to saucepan. Fill with enough water to cover veggies and bring to a boil. Turn down heat slightly and cook until fork tender. Drain completely and add salt, pepper, and sugar. Stir until squash starts to break up (but leave plenty large chunks!) Pour into baking dish and sprinkle
with bread crumbs and shredded cheese. Bake at 400 degrees for about 15 minutes.
I know so many of you will go ugh - I don't like Okra either. Please try this and then say that!!
OKRA AND ONION RINGS
Take however many Okra pods you need -- I used about 20 pods-- wash and slice into large chunks (cutting each Okra pod into about thirds)
1 large onion - cut into rings
1/4 cup corn meal
1/2 tsp. baking soda
a few slices of fresh jalapeno chopped up (to taste)
1/4 cup flour
salt - 1 tsp.
1/2 tsp. black pepper
2 tablespoons olive oil
Combine Okra, Onion and Jalapeno in medium size bowl, and dust with baking soda, flour, salt, black pepper and corn meal. Heat olive oil in skillet and add seasoned vegetables. cook on medium high - stirring often and turning until fork tender and parts of it crusted and turning brown. sERVE ALL OF THIS WITH CORNBREAD!! DELICIOUS!!!
I also had done stewed new potatoes and I will give you the recipe but it is 10:15 and Travis has given me a huge list he wants typed so I am going to have to continue this later!!
