RECIPES, RECIPES, AND RECIPES

Good evening! Today has been a very full day. Church this morning - a shower at 4:00 at West Erwin -- it was wonderful to see so many friends from long ago and get to visit. There was to be another shower at church this evening after services -- it was a fellowhip and shower so I made sandwiches and pie for it before I left for the 4:00 shower. I had not planned to stay long but I visited with so many old friends that I had to hurry and pick up Travis, the gift and food to get to church on time! I am so happy to be back home with nothing to do but write in my blog!!!

I told you last time I wrote I would give you the stewed potato recipe - so here we go!

STEWED NEW POTATOES

Quantity can depend on your eaters and how many!

5 or 6 small new potatoes, partially scraped
Boil in water until fork tender and some of the water has cooked down. Leave about 1-1/2 to 2 cups of water in pan. Salt and pepper to taste or use about 1 tsp. salt and 1 tsp. Penzey's Fresh Ground Blackpepper (or whatever you have until you can get some Penzeys! Then to have the creamiest potatoes take about 1/2 cup white flour and stir into about 3/4 cup ice cold water - stirring until well blended. Gradually pour the flour water mixture into the potatoes, stirring gently until thickened. Add 1 pat of butter. Cook until you have a good thick gravy - stirring and careful not to scorch! If it is a little too thick - add a little milk or half and half to thin slightly. (You can substitute corn starch for flour but they are definitely not as creamy and tasty!!)

Travis loves these things with cornbread!!My dad also could eat them until he practically burst! This is a very old recipe Mother got from Dad's mother over 60 years ago! I looked in several cookbooks and there was no sign of it!!!

We had a great sermon today on the joy of marriage and then in class we are watching a video about marriage. You may be thinking "why would someone who has been married as long as you have go to something like that?" Well you are never too old to be reminded about how men and women are different and have different needs and we need to be like Christ and be a servant to our spouses! See if we both do that with Christ as our center - we will both have our needs met! The guy that speaks in the video is funny -- he says sometimes men can act like jerks and sometimes women can act like jerkettes! Today - he said he was going to tell all of us women a secret that would help us in our marriage. He said men are STUPID and we have to be very specific with them! I am so guilty of saying I want to go someplace but won't say where so as a rule we don't go any place!! I told Travis after class he was probably the only person that could tell someone they were stupid and them like it!! It is a great class!!

Today for the shower I made another Blueberry Pie! It is so easy and really good - I suppose it is because both times I've mad it - it disappeared!

BLUEBERRY PIE

1 Can Eagle Brand Milk (I used the cheaper store brand and it is just as good!)
Juice of 2 lemons or 1/4 cup lemon juice
1/2 pint whipping cream
1 Cup of pecans
1 Can of blueberries
1 pie crust - either baked or graham cracker crust (which is what I used)

Drain blueberries. Mix condensed milk with lemon juice and 1/2 cup of the whipping cream (not whipped). Stir in pecans (it says pecan halves but I chop mine) and drained blueberries. Pour into crust. Top with the remaining cream, whipped with about 3 tablespoons of sugar. Store in refrigerator until served. Serves 8. This may be made the day before or several hours before serving. Enjoy!!


Here is another one of the pies I made for Wednesday's meal last week.

MAMAW'S QUICK PIES

1 Can Eagle Brand Milk (again I used store brand)
1 - 13-1/2 oz. carton Cool Whip
3 Tablespoons lemon juice
2 Small cans crushed pineapple, drained
2 Graham Cracker crusts

Combine ingredients and pour into crusts and chill at least two hours. Makes 2 pies and Serves 16. VERY EASY!!!
