ANOTHER MILESTONE - 150 POSTS WITH THIS ONE!

Good evening. Got home late - was tied up in a meeting until late and was a little late for another appointment at 4:00 but it all worked out. Of course I was late getting home so we disappointedly didn't get to attend the Primetimer's party tonight (which I helped make the desserts for last night) but we can never attend - we are always just getting home when they start eating or partying or whatever! Maybe in a few years when we retire!!!

Some things on the computer are so bizare -- I had to change Iphones and in the change I lost a game I enjoy in the short spare time I have "Sadoka" and a version of the Bible. I have been trying to repurchase them and put them back on my phone. They show I have an account at Apple but the keep asking for my "security code" and the only one they could be talking about is the one on the back of my credit card. I put in the three numbers that are most often used and it says "invalid" so I put in the whole number and it just shuts me off. I am who they say I am and the credit card is the same one I used for the past year so I am very frustrated - and don't know what to do!!

I had such good intentions for tonight. I had planned to make Sopapilla Cheesecakes for work and one for Travis to take to work but by the time we got home from eating it was just too late. You see - we got a very late start and just got home maybe 30 minutes before I started writing. Another time!!!!

We ate at the new Bruno's and it was the first time I had been there. It is really pretty and the pizza was delicious although the three of us only ate one piece each and broght home about five big pieces.

I am hoping when I go out West next weekend - I will encounter some wonderful recipes that I can share!! My dream is to someday go to either France or Italy and attend a cooking school. It would be such a dream come true -- but guess I'd better not hold my breath!!!

Does anyone in your family like just old fashion Chess Pie? Well just in case, here it is:

CHESS PIE

1/2 Stick butter
1-1/2 Cup sugar
1-1/2 tsp. vinegar
1-1/2 tsp. meal
3 slightly beaten eggs
1 Unbaked pie shell
Mix butter, sugar, vinegar and meal thoroughly. Add eggs. Bake in the unbaked pie shell at 350 degrees until done in the center -- careful to not overcook. After about 30 minutes test with toothpick or tester about every 5 minutes until it can be inserted and come out clean!! This recipe is in a cookbook made several years ago at the church we attended - submitted by Mitzi Wilkinson.

I don't think I have given you this recipe!! It is one I use to make often and now I make it occasionally - but it really is good -- especially feeding a crowd -- maybe this fall I will make it for church!!

CHICKEN SPAGETTI CASSEROLE

1 large chicken - cut up or about 6 to 8 chicken breasts
10 oz. spagetti or 10 oz. Macaroni (we like macaroni because it is easie to eat and gives great flavor!)
1 Can cream of mushroom soup
1 Can cream of chicken soup
1 Can Rotel Tomatoes and Green Chilies (Original)
1 Small jar pimentos
8 Tablespoons ripe olives, chopped
1/2 Onion, chopped
1 Garlic clove, minced or pressed
2 Tablespoons butter or better yet - Olive Oil
2 Cups grated cheddar chees
Salt and Pepper to taste.

Boil chicken in large pot of water until chicken is tender. Remove chicken, let cook, and cut into bite size pieces. (RETAIN BROTH)
Saute' onion and garlic in butter until tender.
Cook spaghetti or macaroni in retained broth until tender; drain, leaving about 1/2 cup of broth.
Add chickn, soups, Rotel, onion and garlic, 4 Tbls. chopped ripe olives, chopped pimentos and salt and pepper to taste.

Pour about 1/2 mixture into greased 13 X 9 casserole dish and cover with 1 cup cheese and slice a few ripe olives over it. Cover with remaining mixture. Top with remaining cup of cheese; slice a few more olives on top. Bake at 400 degrees for about 20 minutes -- until all is hot and bubbly and cheese is melted.

Serve with salad and bread!!

ATTITUDE
How is your TUDE? You think its ok, how about the people around you, what would they say, like maybe your spouse? Sometime is the room a little brighter when you leave? What would Jesus say, In 1st Samuel 16 the word says, “Man looks on the outside, God looks on the inside.”
He knows the real you!"

I walked in my office last week and here was a paper on my desk by Chuck Swindoll-- ATTITUDE.
I ask the question in my mind, Did God or my wife put this here? Then I said either way maybe I need a TUDE check. How about YOU, or maybe I need to call your spouse! Well here is the paper.

The longer I live, the more I realize the impact of attitude on life. Attitude, to me, is more important than facts, than the past, than education, than money, than circumstances, than failures, than successes, than what other people think or say or do. It is more important than appearance, giftedness, or skills. It will make or break a company…a church…a home.

The remarkable thing is that we have a choice every day regarding the attitude we will embrace for that day.
We cannot change our past. We cannot change the fact that people will act in a certain way.

We cannot change the inevitable. The only thing we can do is play on the one string we have, and that is our,

ATTITUDE.

I am convinced that that life is 10% what happens to me and 90% how I react to it…and so it is with you.

WE ARE IN GHARGE OF OUR ATTITUDES.
