Good evening or morning or whenever you are reading this --I am just grateful you are! It is late - so I am going to keep it short - well - I plan to unless something just comes floating through that I have to tell you!
Last night I spent over $20 buying the things I needed for Chicken Salad and bread.
It was wonderful - even better today - but Michelle and I ate 1/2 sandwich and Travis ate only one. I told him he could take it to work for his little crew but he didn't - so I gave it to my sister who is having a horrible reaction to some medicine she took. Tonight I decided not to cook - but I did make an absolute delicious dessert! It is like I was inspired by my Mom and the heavens above. I call it:
BLACKBERRY COBBLER PIE
1 Box - 2 crust pie crust, room tempature, ready to roll out to fit pan
2 Ccups blackberries - either frozen or fresh
1-1/2 cups sugar
1 Cup water
1/4 tsp. salt
2 pats butter - thinly sliced, divided
2 heaping tablespoons corn starch,
1/4 cup ice water
Preheat oven to 400 degrees.) Roll out one crust larger than pan. Put into 9 inch pie pan dusted with flour, trim and bake for about 8 minutes. Put blackberries in saucepan with sugar, water, and salt and let start to boil. Add small pieces of the crust that was cut off from pan and drop into boiling mixture. When boiling well, add cornstarch to ice cold water and stir into berries. When thickened - add butter and pour into crust. Top with remaining crust, crunch the edges, cut small slits in top and take a tiny sliver of butter and rub on top and sprinkle with sugar. Place in oven and bake at 400 degrees for about 20 - 30 minutes until golden brown and bubbly from inside. I know I brag a lot on some of the recipes I give you but this is absolutely delicious!!! I took my Mom a piece this morning and she called to say the scraped the dish - it was so good! Now that is a compliment coming from her!!!
Note: I started this last night and some strange sentences was coming out on the computer so I decided I had better wait until tonight to finish this!!!

EASY CHOCOLATE ECLAIR SQUARES
1-3/4 Cup Cold Milk
1 Pkg. (4 serving) Jello Instant Vanilla Pudding Mix
1 - 8 oz. Container Cool Whip thawed
22 Honey Maid Honey Graham crackers
3 Tablespoons butter
2 Squares Bakers Unsweetened Baking Chocolate
2 Tablespoons Cold Milk
1 Cup Sifted powdered sugar
Pour 1-3/4 cup milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Layer 1/3 Graham Crackers and 1/2 of whipped topping in 13 X 9" pan. (You can break crackers as you need to to make fit Place softened butter, chocolate, and two tablespoons butter in small pan; cook on low heat until chocolate is completely melted and mixture is blended. Gradually add sugar, stirring until well blended. Spread over graham crackers. Refrigerate several hours or overnight. Store leftover in frig. Makes 24 servings!!

How was your day today? Mine was busy with a few loan requests and many calls from tellers about possible holds on checks being deposited and such like. I worked late today working on a report fine was supposed to be in last Friday and there was just no way!!! Yesterday was the day of stange people! We have those ever so often!!! I am just counting on making it through tomorrow if GOd sees fit to let me see it through tonight and then I will be on vacation and Gage Hotel - here I come!!! I have never been so ready for a break!!!
