Good evening -- if I make lots of mistakes tonight it is partially because I am not used to Travis' computer and mine has been taken to a wonderful guy at the bank that hopefully can discern why none of the keys on my computer works!! His keyboard is very sensitive and is very different from mine.
We asked Michelle tonight if she saw anyone she knew today while at work at ETCA and she said "NO" so then then we started naming people and it was "Oh yes -I saw her" and we kept naming people and she kept saying she saw them! She loves it so much but she can't forget her last experience over 15 years ago!
Here is the recipe with the additions I made because I guess "I LIKE IT HOT!"
CHICKEN BREAST LA JOLLA
(Now don't ask me what that means because I have no clue! The ingredients include:
8 Boneless chicken breasts -- or what I used about 16 or 20 chicken thighs)
1 tsp. granuated garlic -- didn't have any so I minced about 3 cloves
1 tsp. paprika
1 tsp. minced ginger*
1/2 tsp. groumd cumin A(I didn't see the 1/2 and used 1 tsp,.)
1/4 tsp-. white pepper (I used to have white pepper and never used it so I threw it away so I used black pepper)
1/4 cup Pineapple juice (Ok - I am lazy - didn't have any pineapple juice so I used apple juice with some rum to sweeten it!)
1/4 cup low sodium soy sauce (HAD IT!)
Then I added: 1 jalapeno minced and several shakes of crushed red pepper flakes
* Minced ginger -- several years ago, one of the produce men at Brookshires was taking down a display at a cooking show I attended and he knew me and gave me a huge chunk of Ginger. I told him I didn't use Ginger that often and he said "Freeze It" and then just use it when you need it. So I froze it and am still using it and the aroma, flavor and texture is wonderful after several years in the freezer! Great advise - John!!!!
By the way - the chicken was delicious and even better (and hotter) the next day!!!!
Did I tell you I am leaving again Thursday for a visit with one of my very best friends - one whom I love dearly and miss so much? Well I am going to Ruidoso, New Mexico and although I feel so bad about leaving my family right now - I need to see her and know I will enjoy the visit. I just wish everyone would be happy for me!
This seems so short---but short doesn't mean "empty" -- it just means I am going to spare you my "ranting" although I think it is all based on morality!
