FINALLY COOKED AGAIN!!!

Good Thursday evening!! Last day of March -- can you believe it is time to start planning those vacations!!!! Oh how I wish it was Friday evening!!!Finally cooked - I think the last time was Monday week!! I just didn't feel like it but today I felt so much better - even felt like going to grocery store and cooking and cleaning up! Thank the Good Lord!! Did a delicious bow tie pasta -- so simple but really delicious! Cooked the pasta in a salted boiling water for about 13 minutes and then drained -- (Never rinse with water!!!) Then I put about 4 Tablespoons olive oil in large skillet, pressed about 3 cloves garlic into it, through in some freeze dried chives, a little more freeze dried garlic (minced) about 1 tsp. of crushed red pepper and several dusts of black pepper. I let it cook until there was a delicious aroma coming from the skillet. Then I added about 1/8th cup white wine and let it cook another 3 minutes. Then I lowered heat to warm and added pasta - and tossed until well coated. I proably blew my weight -- it was so good. I made grilled hamburger topped with swiss cheese. Before I made the large thick patties - I combined it with 2 tablespoons olive oil, 2 tablespoons white wine, 1 beaten egg, 3 tablespoons flour, black pepper, salt and a couple of dashes of crushed red pepper, and 2 pressed cloves of garlic. It was really good meat (96/4% fat)! Then I made a spinach salad with fresh spinach, 4 large fresh strawberries sliced, 1 mango, peeled and sliced into bit slices, toasted almonds (about 1/4 cup), salt and pepper. Then I mixed up 2 tablespoons good olive oil, 1 tablespoon balsamic vinegar (my was aged over 25 years) and 1/2 package splenda, and about 1 tablespoon vinegar (I used flavored rice vinegar - all I had!!) Just before serving I poured the dressing over the salad and tossed. Just enough dressing to coat it and it was really delicious -- and that is all we had.

Well - basically I've given you three really great recipes -- all created as I cooked. I really hope you will try some of them!!!

Two Horses

Just up the road from my home is a field, with two horses in it.

From a distance, each horse looks like any other horse. But if you stop your car, or are walking by, you will notice something quite amazing....

Looking into the eyes of one horse will disclose that he is blind. His owner has chosen not to have him put down, but has made a good home for him.


This alone is amazing.

If you stand nearby and listen, you will hear the sound of a bell.
Looking around for the source of the sound, you will see that it comes from the smaller horse in the field.

Attached to the horse's halter is a small bell.
It lets the blind friend know where the other horse is, so he can follow.

As you stand and watch these two friends,
You'll see that the horse with the bell is always checking on the blind horse, and that the blind horse will listen for the bell and then slowly walk to where the other horse is, trusting that he will not be led astray.

When the horse with the bell returns
To the shelter of the barn each evening,
It stops occasionally and looks back,
Making sure that the blind friend isn't too far behind to hear the bell.

Like the owners of these two horses,
God does not throw us away just because we are not perfect
Or because we have problems or challenges.

He watches over us and even brings others into our lives
To help us when we are in need..

Sometimes we are the blind horse
Being guided by the little ringing bell of those who God places in our lives.

Other times we are the guide horse, helping others to find their way....

Good friends are like that... You may not always see them, but you know they are always there..

Please listen for my bell and I'll listen for yours.
And remember...
Be kinder than necessary-
Everyone you meet is fighting
Some kind of battle.
Live simply,
Love generously,
Care deeply,
Speak kindly.......

And leave the rest to God!

SALSA TIME AGAIN

Good Sunday Evening!!! I almost put "good Sunday evening Mate"! Coming home from church tonight Maura, my little 8 year old niece has discovered her 4th dialect -- she was speaking with a real Irish brogue. Every sentence ended with "Mate!" She now adds that to her "real country dialect" and "most proper English" dialect. She really is a talented little girl! We went to Longview after church and ate at Caces, then went to Ellis Pottery where we saw lots of really neat and expensive things (didn't buy anything) and then came back by Jordans and found a couple of "must have pots" and ferns, and day lilies! My backyard is beginning to come alive again! The fruit trees are beginning to have blooms, flowers are blooming and I am loving it! God makes such beautiful gardens!!!

I had a delicious salad for lunch (had to do salad after El Charro's last night.) The salad was a spinach salad with a pecan vinagerette with grilled shrimp on top. Really tasty!!! It would be very easy to make -- very healthy too!

I guess you have probably guessed by now that one of my favorite things to make is Salsa -- any and every kind. I will try it once! I made salsa for a party on Friday at work and I had a bag with frozen onion, peppers, and black olives. I dumped all of it in the processor! Then I added the diced tomatoes, garlic, bell pepper, red onion, cumin, -- all the usual stuff! My boss actually said it was really good - and normally he finds something wrong with it!!! Here is another salsa recipe:

CRANBERRY SALSA

1 Cup whole-berry cranberry sauce
1/3 cup fresh chopped fresh cilantro
2 Tablespoons chopped green onions
1 tablespoon fresh lime juice
1/2 tsp. ground cumin
1 Anjou pear, cored and finely diced
1 Jalapeno pepper, minced
1/2 tsp. salt
To prepare salsa, combine 8 ingredients. Cover and chill.

This is delicious served with turkey sandwiches or turkey/cheese wraps. It also goes well with these Jack Quesadillas.

Cooking spray
1/4 cup (2 inch thick) slices green onions (or red onions)
1 Cup (4 ounces) shredded Monterey Jack cheese with jalapeno peppers
8 (8 inch) flour tortillas
2 Cups chopped cooked turkey
1/2 cup fat free sour cream

To prepare quesadillas, heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add 1/4 cup sliced onions to pan; saute 3 minutes or until tender. Remove onions from pan; reduce heat to medium. Sprinkle 2 tablespoons cheese over each of 4 tortillas. Top each cheese covered tortilla with 1/4th of onions, 1/2 cup turkey, 2 tablespoons cheese, and top with another tortilla.

Recoat pan with cooking spray. Add one quesadilla to pan; cook 2 minutes on each side or until lightly browned and cheese melts. Repeat with remaining quesadillas. Cut eacg quesadilla into 6 wedges. Serve with cranberry salsa and sour cream. A grill pan and press works wonders!!

You could always used sauteed vegetables in place of the turkey. Think how portobello mushrooms would be!!!

A Boeing engineer
stood up and replied quietly: "Our carriers have three
hospitals on board that can treat several hundred people; they are
nuclear powered and can supply emergency electrical power to
shore facilities; they have three cafeterias with the capacity to
feed 3,000 people three meals a day, they can produce several thousand
gallons of fresh water from sea water each day, and they carry half a
dozen helicopters for use in transporting victims and injured to and
from their flight deck. We have eleven such ships;
how many does France have?"

was attending a naval conference that included
Admirals from the U.S., English, Canadian, Australian and French
Navies At a cocktail reception, he found himself standing with a large
group of officers that included personnel from most of those countries.
Everyone was chatting away in English as they sipped their drinks but a
French admiral suddenly complained that, whereas Europeans learn many
languages, Americans learn only English. He then asked, "Why is it that
we always have to speak English in these conferences rather than
speaking French?"


Without hesitating,
the American Admiral replied, "Maybe it's because the
Brit's, Canadians, Aussie's and Americans arranged it so you wouldn't
have to speak German."

GOOD RECIPES ABOUND

Good evening! This has been one busy day topped off with Red Cross Board Meeting and then finishing up dinner at about 8:30! Tried a new recipe and it turned out to be very good! For the lack of knowing the real name I am going to call it FiestaGgreen Chicken Taco's. Over a year ago I gave you a recipe similar - but this is different!

FIESTA GREEN CHICKEN TACOS

3 to 4 large skinless chicken breasts
1 12 -14 oz. jar of Salsa Verde (Green sauce)
Black pepper
minced garlic
1/2 of small red onion
1 tomato, chopped small
Shreded lettuce
Grated cheese (optional)
1 Bag tortillas (your choice of corn or flour)

Wash the chicken and remove any fat that is clinging. Pat dry with paper towel. Cover each chicken breast with black pepper and garlic. Place in crockpot and pour green salsa verde over it. Let cook on high until hot and then turn to low. Cook for about 5 hours. Take meat out and shred with 2 forks. Add about 1/2 cup of water to the remaining sauce and heat again. Now cut up tomatoes, shred lettuce, (or do like I did - buy a bag of shreded lettuce - Brookshires actually has it on sale this week for $1.39!), and red onion. I didn't add grated cheese, but you can! You need to add a little bit of sauce to the pulled chicken to keep it moist. Now you are ready to make tacos. I let everyone make them for themselves!

I also prepared Spanish Rice - the first I've ever made some that Travis liked. I used a box of Spanish Rice and added 2 cups water, a little garlic and black pepper (these two are not on the box) and 1 can Petite diced tomatoes. It was tasty!

I think my lower back has about convinced me that I need a shot to the nerve. I have been dealing with some horrible pain. Any recommendations for a doctor??

Here is one more recipes. It is easy to make and very good!

Chicken-and-Strawberry Salad

Yield: Makes six servings

1/2 cup poppy seed dressing
1/4 cup mayonnaise
1-1/2 lbs. chopped cooked chicken (about 3-1/2 cups)
2 celery ribs, sliced
1 Pint fresh strawberries, halved
1 avocado, cut into 1-inch cubes
1/2 small red onion, thinly sliced
1/2 cup slivered almonds, toasted
1 (10 oz.) package mixed salad greens
Garnish: Avocado slices, whole strawberries

Whisk together dressing and mayonnaise in large bowl. Cover and chill 30 minutes, Add chopped chicken and next 5 ingredients to dressing mixture, gently tossing to coat. Serve over mixed salad greens. Garnish, if desired.
Very nice for a luncheon or light dinner!!

GOD'S BLESSING COMES IN ALL KINDS OF WAYS - EVEN COLLEGE KIDS!

Too tired (I know it seems I am like that alot!) to write much but a couple of things just can't wait! Last night we fed way over 100 people at church (some I had never seen before) but I've just got to tell you GOD INTERVENED - and saved my life! Seriously I had wondered how I would get through the evening with my back hurting so bad -- but 9 young people from Harding University showed up and they DID EVERYTHING--set up tables, put on tablecloths, decorations, and salt and pepper shakes. They then thawed and cut up the fish, made tea and lemonade, lifted any and everything we needed, cooked fish - french fries,hush pupplies, and tons of it, plus pickles, jalapenos and hold on - brownies, sliced lemons, mixed slaw,took up brownies and lemon squares and served the food!!One did decline the offer to cut the brownies -- of course it was a guy! ha! All with wonderful attitudes and servant hearts! Six of them were staying with a couple of twins from Shiloh, and another friend from Shiloh helped. They were so wonderful and precious -- I will always remember them and their service!!

One more thing -- a few posts back - probaby a couple of weeks ago I gave you a recipe for CHOCOLATE FUDGE PIE and I was going to make six of them to go along with the 6 pans of Lemon Bars for dessert - but I forgot to bring six pie plates -- oh yes - I have about 15 (at least)! So I told Pam - my dear friend who helps me that I thought we could just press the pie crusts into the pans and then pour in the filling and then bake! So - bless her servant heart - she pressed all six crusts into the pans (dusted with flour) and did a wonderful job. I mixed up the filling and filled the pans up. We did three at a time! They baked perfectly and went like hot cakes. I named them "Fudge Pie Brownies" and a great new recipe was created and I will probably never cooked plain ol'Fudge Pie again! Another bonus - it serves more that way!!!

Pam and Harry are even more wonderful than the young people from Harding. Everytime I cook - they are there helping. Harry will do lifting, chopping (he is an expert at cutting up onions!)dish washing, anything that needs it, and Pam helps with all of it. Also James and JoAnn are willing to do anything that needs to be done! SHe came in last night and took over the cash box. And my friend, Gwynn never fails to call and offer her help, which I use alot. Thankfully - she and James got a by for the night! THANK YOU - ALL MY FRIENDS!!!

Here is a neat recipe I am going to try soon!

FAST FLORENTINE RICE

1 Bag Boil in Bag rice (my opinion - get brown if available)
1/2 lb. fresh spinach
2 Tablespoons butter
1/4 tsp. ground pepper (it says white but I will use Pensey's Fresh Ground Black)
1/4 tsp. dried rosemary
1/4 tsp. garlic powder (I would definitey use about 1/2 tsp. or press about 2 cloves fresh garlic)
3/4 cup Parmesan cheese, freshly grated
1/3 cup Pine Nuts, toasted
1 (2 oz) jar Pimento, drained

Prepare rice according to package directions. Set aside.

Remove stems from spinach; wash leaves thoroughly and tear into large pieces. Melt butter in a saucepan over medium high heat; add spinach and spices and suate' until spinach is softens - 2 tp 3 minutes. Stir in rice, cheese, nuts, and pimento, stirring until thoroughly heated and cheese is melted.

Sounds delicious! Try it and let me know!! PLEASE!!

It’s not like there isn’t any preaching going on—the pulpits are full every week, and the airwaves are saturated with Brother and Sister So and So. Television, Radio, Internet, Podcasts, and every other form of mass communication conceivable are loaded like a pickup in Pakistan with hawkers of holiness in one form or another. But where exactly in all of this is The Word of The Lord?
There are speakers galore, but what is the LORD saying? The psalmist wondered the same in his day, “There’s not a sign or symbol of God in sight, nor anyone to speak in His name, no one who knows what’s going on.” (Psalm 74:9)

By the way, have you noticed the conspicuous absence of the Bible in most of our church meetings? Not only there, but also in most of our seminars and conferences, and our revival meetings? It would seem that the Bible is no longer the cherished Book. In our fast-track world we have shifted to power-point snippets of scripture, and story-telling instead of preaching the Word.

Running to and fro, here and there, looking earnestly for that next Big Buzz—anything with a hint of something sensational to touch our lifeless souls.

We need a word from the Lord, for where the Word of a King is, there is power. Not pretend power; not hype-power, not fame-grabbing, money-making power. Not shouting-at-the-devil power—but real power. The kind of spiritual and moral power that converts, corrects comforts, cleanses, and need no commercials to spread its influence.
In a day of famine, we need a word from God, people are starving.

“May the Lamb that was slain receive the rewards of His suffering.”

COOKING - A PASSION RENEWED

Good evening! It is 9:13 p.m., and I haven't been home long from preparing dessert for tomorrow night's meal at church. Lemon bars - no not from a mix, but from scratch! I can't remember if I have given you this recipe or not -- but if it was early last year, it will be very hard to find -- so I will give it to you tonight! The aroma was so wonderful. I've put them in the warming oven, no not turned on, and put a note on the door to "Please don't turn on the warming oven!" Tomorrow we make "Fudge Pies" and finish the slaw, bake the chicken and sweet potato fries. Daryle will fry the fish, rest of the fries, and the hush puppies! Together - it should be an awesome meal.

Talk about awesome! I attended a "Tyler Celebrity Chef Cooking Class" last Saturday. Oh my goodness - the chef was Stephen Pyles, a world famous chef that has appeared on TV and won numerous awards. He has wonderful cookbooks - (I want the "Tamales" next),has opened several restaurants, the latest two in Dallas. They are "Stephen Pyles" and the other is "Samar's" which is more Asyian and European inspired. He announced that his next restaurant would be a "Southwest" themed restaurant and one of my goals this year is to eat at one of his restaurants! What impressed me most - besides the awesome food - was the fact that he is so personable and does not have a "celebrity attitude" but was so nice - he was getting paid regardless - but the friendliness came from a genuine person - one you wished you could know better and learn more from!!

One of the things I learned (among several - and I consider myself a pretty good cook) is that you can roast bananas! You place them on a baking sheet and place in an oven of about 350 degrees for about 15 minutes. The peel will turn black and the meat is soft, sweet, and delicious. Thanks Stephen for sharing that secret. I make lots of banana bread and always wonder about putting the raw banana in it -- I can't wait to roast my bananas and make the bread! I can only imagine how good it will be!! I just hope he will forgive me for sharing his secret! I would love to share his recipes, especially his "Black Bean-Roast Banana Mash" or his "Sweet Potato Vichyssoise"(which was my very favorite!!!) - but I don't think that would be professional - so you will just have to sometimes enjoy the dishes of his that I make! I just trust the Woman's Forum Group will have the foresight to bring Mr. Pyle back and back and back!!!

Here is the recipe I promised for Lemon Bars: (Oh - we just made 6 recipes of it - and tomorrow we will finish with 6 Fudge Pies - which I've already given to you!

JEREMY'S LEMON BARS (Actually these are Jeremy's grandmother's recipe and we loved when his birthday rolled around and she brought them at the bank!- We miss you Jeremy - especially your grandmother's Lemon Bars!)

2 Sticks real butter, softened
2 Cups flour
1/2 cup powdered sugar

2 Cups Sugar
1 heaping tablespoon flour
1 Tsp. baking powder
1/2 tsp. salt
4 eggs
4 Tablespoons lemon juice
1 tsp. Lemon zest - (I added this but think it adds to the flavor)
DIRECTIONS:

Combine butter, 2 cups flour, and 1/2 cup powdered sugar and mix well. After very pliable - press into 9X13 pan. Press mixture up about 1/2 inch on the sides. Bake 20 minutes at 350 degreees, or until slightly brown. Lower oven to 300 degrees.

Now - mix well together: 2 cups sugar, 1 heaping tablespoon flour, baking powder, eggs and lemon juice (with zest). Pour into crust and bake at 300 degreees until very lightly browned and the batter is set and does not jiggle. Cut into small squares and sit back and enjoy the praise!!!

Did you know that if you will partially freeze meat (for example for stir fry dishes)it will slice easily into thin strips? Try it the next time you are doing a great stir fry or fajitas! Even if it is "fresh from the market" - stick it in the freezer for a little while!

How many of you have gone to Fresh - Brookshire's awesome new concept? Wonderful - I think. Of course - we went opening day (could not wait) - actually Thursday evening and I only got to see half of it. Can't wait to go back and tour the last half! Kathy went at lunch on Friday and got tacos. Oh my goodness - mine was the pulled pork (first on the list), with a tomatillo sauce over it, and it was without no doubt the best taco I have had in this town! Price was right too - only $2.25! I want more!!! Their breads are wonderful -- the aroma alone will make you hungry. I absolutely wish them the best and hope they will be here for years and years!!! In my opinion - soon they will rival Central Market in Dallas.

I found all of these wonderful "Cooking Tips" and hope to share a couple with you in each blog. Better finish this up tonight - have to get up early and then at noon I will leave and work myself down - hoping I will please someones palette Wednesday evening!!

RUSH - RUSH - RUSH - IT IS WORTH THE EFFORT!

It seems Wednesday's are one of the times we rush the most! IT would be so easy to just say "I am too tired!" or "Let's just rest tonight!" or "There won't be anything going on tonight" or "Let's just go eat a good meal and relax!" -- because we get home and by 5:30 - it is rush, rush, rush -- we've got to feed and walk our babies (Schnauzers), Travis has to take a bath, I have to freshen my make-up - then rush to get food (always a problem trying to figure out where we can get something in a hurry and choke it down- and we are always too late to go eat at the church's meal), then go pick up our sweet niece rushing her so we can get there by 7:00. But as we arrive and get out of the car - people are waving and speaking and then inside - it is even more of that. Life gets exciting and then we go to class - and wow - we learn something new - or we get a better perspective on some verse in the Bible or we hear a story that makes you want to reach out to someone! Was the pushing yourself, the rush worth it? - You bet it was!! IF you don't come to class on Wednesday night, you are missing some of the best fellowship there is - and a closeness to Jesus you don't always get on Sundays! Our ladies class was out this week for spring break (our lecturer, Diane Litton is in Peru visiting her family!) so Michelle and I went to Mark's class. IT was very good - they are using a book by Phillip Yancy to study more about Jesus and who he ministered to -- and how we should minister to our community! Jesus did not go in bars and houses of ill repute looking to save them - they came to him either by intent or by God's intervention! Don't we come in contact each day with those who are lost and need a guide?

I think you are probably saying "Ok, this blogs says Jon Carole Cooks! Where are the recipes??" You are right but when something is on my heart - I need to say it. Fresh opens tomorrow -- you should have seen all of the cars there today - representing all of the work going on inside! Can't wait to see it -- but will probably wait a couple of weeks! I am not one that wants to go to anything the first week or two it has opened. Haven't been to BJ's yet - have had good and bad reviews -- guess I will go and decide for myself!

I made a brisket and potato salad for our Sunday lunch at church and had some fabulous feedback on the potato salad, as well as the brisket. My sister wanted to know if I remembered how I made it and I do! So here it is -- the thing about Potato salad - you can change it weekly and it will be just as good or better than the last time you made it. I have found the one thing that makes it better is use Yukon Gold Potatoes. They are a tad more expensive but worth it!

POTATO SALAD

1 - 5 lb. bag Yukon gold potatoes
2 hardboiled eggs, chopped
1 stick butter
1 Tablespoon salt
2 tsps. Penzey's Fresh Ground black pepper
1 tablespoon sugar
1 to 1-1/2 cups Light or fat free Mayo
2 tsps. Penzey's dry mustard
1 tsp. Penzey's cayenne pwd.
1/4 cup sweet pickle relish
1 small jar diced pimentoes
2 tablespoons either apple cider vinegar or Seasoned Rice Vinegar (what I used)
1 Tablespoon Penzey's Fox Point
2 Tablespoons Penzey's Celery seed

Directions:

Peel and cut the potatoes into quarters. Put in large sauce pan and cover with water. Boil until fork tender. Drain - leaving a bit of water in the pan. Add butter and mash potatoes and butter until fairly smooth. Add remaining ingredients and stir until well combined. TASTE AND SEE if it needs more salt or pepper and if it is thin enough. (Remember when it is chilled it stiffens up some) If it seems too dry - add another 1/4th to 1/2 cup mayo. take up in bowl and either serve immediately or cover and place in refrigerator until ready to serve!

(Note -- you can use any brand where I said "PENZEY'S -- that is just the brand I use and love!!! Of course you can cut recipe in half - still use 2 eggs!!)

GREAT FOOD MAKES HAPPY PEOPLE

Wow - how long has it been? Seems like it just gets too late to start a blog every night when I finally get through with other things - like cleaning the kitchen, etc. Maybe with the time change - it will trick me into thinking it is not as late as it really is! I actually have cooked some good food since the last post. Our "sheparding" roup met at church after services and I took a beef brisket that has slowly cooked all night and then I added a special sauce - a recipe I got from a new cookbook Travis had bought on Saturday "The Niman Ranch Cookbook" and everyone that ate some bragged on it! The cookbook is awesome - tells all about how the people on the ranch raise the cattle, how to cut it and how to cook it. Only problem is that most recipes take 9 to 14 hours to cook - so I will probably just make sauces! The potato salad was well received too! Then I just made the old standby Chocolate cake (that I have actually posted 3 times)that is easy but good. Last night I grilled chicken legs - that were well seasoned with olive oil, and just about every spice I owned. Of course I sprayed often with apple juice while grilling. Just served those with turnip greens and collard greens -seasoned with garlic, pepper, and Fox Point, and then just baked some sweet potato fries and hush puppies. Tonight I was ready to go to LaPlazita's! The food was delicious but they over charged us again. We had not been in over a month because of the same thing -- they don't give you a ticket and then they just start putting amounts into the adding machine. We love the food -- but don't like the system - and it will probably be a long time before we go back again!

I seasoned the brisket with Penzey's Fresh Ground blackpepper, fresh pressed garlic (probably about 6 cloves), lots of liquid smoke, and Penzey's Red and Black pepper. Then I poured some Port Wine over it and then sprinkled one package of Sazon Goya over it. Wrapped it in foil and let it sit out about 2 hours. Then at 11 pm, I put it in a 250 degree oven and let it cook until about 4 am, when I took it out of the oven. Travis sliced it and below is the recipe for the sauce that we put over it:

BO'S BARBEQUE SAUCE

1 Tablespoon Olive Oil
1/2 small yellow onion, minced
1 clove garlic, minced (I used 2 cloves)
1 cup katchup
3 tablespoons fresh lemon juice
2 tablespoons Worcestershire sauce
3 tablespoons brown sugar (I used 4)
1 tsp. dry mustard (had just bought some at Penzey's)
1/2 tsp. freshly ground black pepper (used teaspoon)
1/4 tsp. crushed red pepper ( I used 1/2 tsp. Penzey's crushed red pepper)
Kosher salt to taste
(I also added 2 tsp. sugar -- seemed a little bitter without!)

Heat the olive oil in small sauce pan over medium high heat. Add the onion and garlic and cook, stirring often for about 3 minutes, until soft. Stir in the katchup, lemon juice, Worcestershire sauce, brown sugar, mustard, black pepper, and crushed red pepper. Bring to a boil and cook for 2 to 3 minutes, until the sugar melts. Season to taste with salt then taste and adjust the seasonings to your taste. THAT IS WHEN I ADDED THE SUGAR! Just before serving - pour over the sliced brisket and heat in a 350 degree over until good and warm. Enjoy!!

How many of you love those Red Lobster Cheese Biscuits? Well - you know that is about the only thing I like there. So - this recipe was sent to me! Let's try it and see if it is the real McCoy!!!

RED LOBSTER CHEESE BISCUITS

2 Cups Bisquick
2/3 Cup Milk
1/2 Cup grated Cheddar cheese
1/4 cup Parmesan cheese

Mix all together, drop by spoonfuls on cookie sheet. Bake @ 400 degrees for 10 minutes. Brush top of biscuits with 1/2 cup melted butter, 1 tsp. garlic powder, and 2 tsp. parsley flakes.

Good advice!! I hope you try the recipes - the brisket and sauce was really GOOD! Are you still trying to find someone to bless with a good deed? We all need to be vigilant and look for someone who needs a friend -- even if it is just to pay for the car in line behind you at McDonald's with the message: "Just pass it on!"

THURSDAY EVENING - A RAMBLING POST

Good evening-- it is pretty late but I feel I really want to connect with each of you! Today we had a conversation about - of all things - cornbread -- think that would have been a discussion in the North? Anyway - we were trying to think of all the things that are either made with cornbread, the different kinds of cornbread, or what you normally (or not so normally) eat with cornbread. Now where that came from-not sure who could explain that! Ok - think, think, think! Cornbread dressing (of course) yes - absolutely deliciou unless it is saturated in sage or has cream of chicken soup - also - Mexican cornbread casserole, then there is regular corn bread, JC's Jiffy cornbread, Mexican cornbread, brocolli cornbread and hundred of version of "homemade": cornbread! Then you can eat cornbread with chili, soup, buttermilk (uck!), plain and with butter, soup, blackeye peas, beans of all sorts, and on and on and on! Amazing - so many great recipes from an ol Soouthern standby!! Probably because corn meal was all they had! How amazing and creative those women were!!

I looked through my blog today - got all of the way through April 2010 when I could not go any further and realized I have probaby duplicated several recipes several times - but with way over a hundred posts - I forget some of the recipes and if they are numerous -they were exceptional then I remembered them or cooked them again and felt I had to share. One is the Chocolate Sheath Cake - with cinnamon - I think I found it 3 or 4 times - but it is worth it!!! Whichever post you retrieved - the chocolate cake( with great fudge icing) is worth the effort!!!

We went to Don Juans tonight -- so guess I gained another pound even though I only ate one chicken enchilada with verde (green sauce) and salad. But of course there is chips, tortillo's, and hot sauce)to pad the hips!!

Our church "sheparding group" is meeting this Sunday for the first time and we are to take potluck food. I am trying to decide on something that will shine and everyone will appreciate and enjoy. Travis suggested Chicken and Dressing - but although delicous - it is not easy and not the showy dish I want!

I really want to know how to add movies, poems, words that pertain to my blog and think it would really enhance it. It might also gain me another reader or two.

Here is a recipe that I may have already posted - but way back then is too far to look and find it - so here it is:

MOM'S COCONUT PIE

Scant cup of sugar
2 Ttsp. flour, rounded
1/2 tsp. salt
1/4 cup coconut
4 eggs

In saucepan, combine sugar, flour, and salt. Into 2 cup measuring cup put 4 egg yolks; beat and finish filling with milk to 2 cups. Add milk mixture to flour-sugar mixture, stiring well. cook (continuing to stir) over medium heat until it thickens. Add 1 tsp. vanilla and 1/2 tsp. butter flavoring. Pour into baked 9 inch crust.

MERANGUE:

6 EGG WHITE
1 TABLESPOON CREAM OF TARTER
1/2 CUP SUGAR
1/2 TSP. VANILLA

Beat egg whites until stiff. Add, while continuing to to beat, 1/2 cup sugar, 1/2 cup sugar and 1/2 tsp. vanilla. Beat until stiff. Pile on top of pie, sealing edges. bake at 350 degrees for about 10 minutes or until meringue becomes a golden brown. This is my families' favorite dessert and I hope they enjoy this one.
