FINALLY COOKED AGAIN!!!

Good Thursday evening!! Last day of March -- can you believe it is time to start planning those vacations!!!! Oh how I wish it was Friday evening!!!Finally cooked - I think the last time was Monday week!! I just didn't feel like it but today I felt so much better - even felt like going to grocery store and cooking and cleaning up! Thank the Good Lord!! Did a delicious bow tie pasta -- so simple but really delicious! Cooked the pasta in a salted boiling water for about 13 minutes and then drained -- (Never rinse with water!!!) Then I put about 4 Tablespoons olive oil in large skillet, pressed about 3 cloves garlic into it, through in some freeze dried chives, a little more freeze dried garlic (minced) about 1 tsp. of crushed red pepper and several dusts of black pepper. I let it cook until there was a delicious aroma coming from the skillet. Then I added about 1/8th cup white wine and let it cook another 3 minutes. Then I lowered heat to warm and added pasta - and tossed until well coated. I proably blew my weight -- it was so good. I made grilled hamburger topped with swiss cheese. Before I made the large thick patties - I combined it with 2 tablespoons olive oil, 2 tablespoons white wine, 1 beaten egg, 3 tablespoons flour, black pepper, salt and a couple of dashes of crushed red pepper, and 2 pressed cloves of garlic. It was really good meat (96/4% fat)! Then I made a spinach salad with fresh spinach, 4 large fresh strawberries sliced, 1 mango, peeled and sliced into bit slices, toasted almonds (about 1/4 cup), salt and pepper. Then I mixed up 2 tablespoons good olive oil, 1 tablespoon balsamic vinegar (my was aged over 25 years) and 1/2 package splenda, and about 1 tablespoon vinegar (I used flavored rice vinegar - all I had!!) Just before serving I poured the dressing over the salad and tossed. Just enough dressing to coat it and it was really delicious -- and that is all we had.

Well - basically I've given you three really great recipes -- all created as I cooked. I really hope you will try some of them!!!

Two Horses

Just up the road from my home is a field, with two horses in it.

From a distance, each horse looks like any other horse. But if you stop your car, or are walking by, you will notice something quite amazing....

Looking into the eyes of one horse will disclose that he is blind. His owner has chosen not to have him put down, but has made a good home for him.


This alone is amazing.

If you stand nearby and listen, you will hear the sound of a bell.
Looking around for the source of the sound, you will see that it comes from the smaller horse in the field.

Attached to the horse's halter is a small bell.
It lets the blind friend know where the other horse is, so he can follow.

As you stand and watch these two friends,
You'll see that the horse with the bell is always checking on the blind horse, and that the blind horse will listen for the bell and then slowly walk to where the other horse is, trusting that he will not be led astray.

When the horse with the bell returns
To the shelter of the barn each evening,
It stops occasionally and looks back,
Making sure that the blind friend isn't too far behind to hear the bell.

Like the owners of these two horses,
God does not throw us away just because we are not perfect
Or because we have problems or challenges.

He watches over us and even brings others into our lives
To help us when we are in need..

Sometimes we are the blind horse
Being guided by the little ringing bell of those who God places in our lives.

Other times we are the guide horse, helping others to find their way....

Good friends are like that... You may not always see them, but you know they are always there..

Please listen for my bell and I'll listen for yours.
And remember...
Be kinder than necessary-
Everyone you meet is fighting
Some kind of battle.
Live simply,
Love generously,
Care deeply,
Speak kindly.......

And leave the rest to God!
