GOOD RECIPES ABOUND

Good evening! This has been one busy day topped off with Red Cross Board Meeting and then finishing up dinner at about 8:30! Tried a new recipe and it turned out to be very good! For the lack of knowing the real name I am going to call it FiestaGgreen Chicken Taco's. Over a year ago I gave you a recipe similar - but this is different!

FIESTA GREEN CHICKEN TACOS

3 to 4 large skinless chicken breasts
1 12 -14 oz. jar of Salsa Verde (Green sauce)
Black pepper
minced garlic
1/2 of small red onion
1 tomato, chopped small
Shreded lettuce
Grated cheese (optional)
1 Bag tortillas (your choice of corn or flour)

Wash the chicken and remove any fat that is clinging. Pat dry with paper towel. Cover each chicken breast with black pepper and garlic. Place in crockpot and pour green salsa verde over it. Let cook on high until hot and then turn to low. Cook for about 5 hours. Take meat out and shred with 2 forks. Add about 1/2 cup of water to the remaining sauce and heat again. Now cut up tomatoes, shred lettuce, (or do like I did - buy a bag of shreded lettuce - Brookshires actually has it on sale this week for $1.39!), and red onion. I didn't add grated cheese, but you can! You need to add a little bit of sauce to the pulled chicken to keep it moist. Now you are ready to make tacos. I let everyone make them for themselves!

I also prepared Spanish Rice - the first I've ever made some that Travis liked. I used a box of Spanish Rice and added 2 cups water, a little garlic and black pepper (these two are not on the box) and 1 can Petite diced tomatoes. It was tasty!

I think my lower back has about convinced me that I need a shot to the nerve. I have been dealing with some horrible pain. Any recommendations for a doctor??

Here is one more recipes. It is easy to make and very good!

Chicken-and-Strawberry Salad

Yield: Makes six servings

1/2 cup poppy seed dressing
1/4 cup mayonnaise
1-1/2 lbs. chopped cooked chicken (about 3-1/2 cups)
2 celery ribs, sliced
1 Pint fresh strawberries, halved
1 avocado, cut into 1-inch cubes
1/2 small red onion, thinly sliced
1/2 cup slivered almonds, toasted
1 (10 oz.) package mixed salad greens
Garnish: Avocado slices, whole strawberries

Whisk together dressing and mayonnaise in large bowl. Cover and chill 30 minutes, Add chopped chicken and next 5 ingredients to dressing mixture, gently tossing to coat. Serve over mixed salad greens. Garnish, if desired.
Very nice for a luncheon or light dinner!!

Well - Michelle is sitting in her chair asleep so I suppose I should close and get to bed too!
