MONDAY - WITH GREAT RECOMMENDATIONS

Good evening! It is late but I had a couple of things to share so I decided it was now or about 2 weeks later! I just volunteered - without absolutely no pressure - to be in charge of the snack foods for Shiloh's VBS. Now you might think - so what is the big deal - cool-ade and cookies. Not so - we are trying to duplicate a Nazareth village during Jesus' time on earth -- so for snacks - it will be olives, grapes, dates (one time and 1 each), raisins, apples, nuts, seeds, bread, cheese, corn (popcorn) and water. So I desparately need lots of help and lots of donated food!! Only trick - I will be gone all of next week - so I have lots of work - this week _ VBS is July 10 - 13 - and hopefully it will be awesome! Have a child - bring them over and I promise they will know about how Jesus lived than before they came!

Ok - ladies - I've waited to make sure - but after testing for about a month - I have to share these wonderful products with you! The Olive oil soap and the loofah
I have been using. It is made by a local artist and it is Body by LouAnn. First, I used the soap to bath with and then I happened to run out of face cleanser - (something I've been doing since I was 28) so I used the soap to cleanse my face. IT washed off so clean and felt so good until I kept using it and all the "Old age" acne went away! I also used the loofa on my heels and balls of my feet - and they stay soft. I wash feet, scrubbing with Loofah, then dry off, rub LuAnn's Heel stick onto them, put on socks for about 30 minutes - and that is it! Amazing! My sister had more acne than I -- and it cleared up too! LouAnn sold me mine at one of the Farmer's markets, but I've bought more at Fresh!!Believe me -- it is wonderful.

Have you ever shopped at a store and when you left - thought - "I can't wait until I can come back and shop again?" WELL - I have numerous times - there are several stores in Tyler that are "my favorites" - but one of the new ones is one of those. Kitchen Drawer is that new one. The owners are friendly, helpful, and become friends immediately. I keep finding myself thinking about the store and what I want to buy next. Something that MIchelle bought me that might seem like a useless seem "not really needed" was a spatula that on one end is the color of peanut butter (matched my kitchen paint exactly) and the other end is grape color - one end is for peanut butter and the other is for jelly. Well whether you use jelly with peanut butter or not, it is wonderful spreading peanut butter. IT spreads better than any knife and washes clean faster than any metal spoon or knife! Buy one - you will love it!!!!

Fresh peaches are abundant -but some of the very best - and oh so delicious is from Clifton's Peach Farm on Hwy 19 near Canton. A good friend, Cathy Shipp, brought me peaches from there and they are so delicious! Wish I had a bushel! Also the blackberries are delicious. I bought a quart from Farmer's Market Saturday and they are o so good. They are so good - fighting the seed is worth it!!

Speaking of berries - here is an easy, delicious Berry Cobbler recipe:

BLACKBERRY COBBLER

(Makes 6 to 8 Servings)

1-1/3 cup sugar
1/2 cup all purpose flour
1/2 cup butter, melted
2 teaspoons vanilla extract
2 to 3 cups fresh blackberries (can use frozen)
1/2 pkg. refrigerated pie crusts
1 tablespoons sugar
Ice Cream, optional
Sugared Piecrust sticks (optional)

STIR together first 4 ingredients in a large bowl. Gently stir in blackberries until sugar mixture is crumbly. Spoon fruit mixture into lightly greased 11X 17 inch baking dish (or 11 X 13)
CUT 1 piecrust into 1/2 inch-wide strips, and arrange strips diagonally over blackberry mixture. Sprinkle top with 1 tablespoon sugar (over all of it).
BAKE at 425 degrees for 45 minutes or until crust is golden brown and center is bubbly. Serve with ice cream and Sugared Piecrust Sticks, if desired.

SUGARED PIECRUST STICKS:
Cut 1 refrigerated piecrust into 1/2 inch thick strips. Sprinkle strips with 1 tablespoon sugar; place on a lightly greased baking sheet. Bake at 425 degrees for 6 to 8 minutes or until golden brown. Serve stuck in bowls of delicious blackberry cobbler!!!!

The sugared piecrust sticks remind me of when I was a little girl when we visited my grandmother in Logansport, Louisana. We would go visit her sister, Aunt Annie, and she always had a pie going on or a cobbler -- but more important - she had pie crust left over and she would always make us what she called "do-dads!" It was simply pie crust cut into small pieces and baked. Take about delicious -- I still love cook pie crust and love it when a piece of crust falls off a pie I made - that is my treat!!!

LET GO - LET GOD!

Good evening. I have truly been trying to get time to write this blog since Sunday - a day which was awesome! Sunday was a celebration of Mike Warner's 20th year of preaching and he preached about some of the lessons he has learned in his 50 years. He was funny, touching, and tear-jerking! The one thing that I loved was that he said that without a sweet wife that stood beside him, he could not have done it. He said that now one of his greatest joys is in sitting on the porch with Barbara each morning, visiting, praying,studying and enjoying one another! My dream retirement!!
Charles Smith had a great lesson on Sunday night so it was a great day! Then on Monday I had a combined board meeting at the house and fed a simple little snack meal that they seemed to really enjoy. Then on Tuesday night - it was a night for me. I was installed as President of the Pilot Club and the ladies were so precious and were so kind. Marjoree Glover did the installation and gave me a beautiful vase with the most gorgous white roses! Such a wonderful evening and the food Shelly cooked at the Woman's building was an added treat. Thanks to everyone!!

For the meeting on Monday night I made Peanut butter brownies and a Pina Colada Cake. The recipe has been around a long time, but here it is - incase it is one of those you made, enjoyed and forgot:

PINA COLADA CAKE

1 (2 layer) pkg. extra moist white cake mix
1/4 cup oil
3 eggs
1 cup (8 oz.) sour cream
1 8.5 oz. can cream of coconut

In large bowl combine cake mix, oil, eggs, sour cream and can of cream of coconut. Beat for about 2 minutes (until well blended. Pour into either 2 greased and floured 8 or 9 inch layer pans or 9 x 13 sheath pan. Bake at 350 degrees about 30 minutes for round and about 40 to 45 minutes for 9 X 13 - or until cake springs back when lightly touched. Cool in pan 15 minutes. Remove from pans (if round) and cool completely on rack. Frost with Pina Colada Frosting.

PINA COLADA FROSTING

1 8 OZ. pkg. cream cheese (1/3 fat reduced is fine)
1- 81/4 oz can crushed pineapple, drained well and blotted dry on paper towel
Angel flake coconut, separated

Mix together (saving about 1/2 cup of coconut to use on top) well and frost either layers and top and sides of round cakes or all on top of 9 X 13 pan. Cover and store in refrigerator!

MAGNOLIAS

"I spent the week before my daughters' June weddding running last minute trips to the caterer, florist, tuxedo shop, and the church about 40 miles away.

Ad happy as I was that Patsy was marrying a good Christian man, I felt laden with responsibilities as I watched my budget dwindle. So many details, so many bills, and so little time. My son Jack was away at college, but he said he would be there to walk his sister down the isle, taking the place of his dad who had died a few years before. He teased Patsy, saying he'd wanted to give her away since she was about three years old!
To save money, I gathered blossoms from several friends who had large magnolia trees. Their lucious, creamy-white blooms and slick green leaves would make beautiful arrangements against the rich dark wood inside the church.

At the rehersal dinner the night before the wedding, we banked the podium area and choir loft with magnolias. As we left just before midnight, I felt tired but satisfied this would be the best wedding any bride had ever had! The music, the ceremony, the reception - and especially the flowers - would be remembered for years.
The big day arrived - the busiest day of my life - and while her bridesmaids helped Patst to dress, her fiance Tom walked with me to the sanctuary to do a final check. when we opened the door and felt a rush of hot air, I almost fainted; and then I saw them - all beautiful white flowers were black.

Funeral black. An electric storm during the night had knocked out the air conditioning system and on that hot summer dy, the flowers had wilted and died.

I panicked, knowing I didn't have time to drive back to our hometown, gather more flowers, and return in time for the wedding.

Tim turned to me: 'Edma. can you get more flowers? I'll throw away these dead ones and put fresh flowers in these arrangements.'

I mumbled 'Sure," as he be-bopped down the hall to put on his cuff links.

Alone in the large sanctuary, I looked up at the dark wooden beams in the arched ceiling. 'Lord,' I prayed, 'please help me. I don't know anyone in town. Help me find someone willing to give me flowers in a hurry!' I scurried out praying for four things: the blessing of white magnolias, courage to find them in an unfamiliar yard, safety from any dog that may bite my leg and a nice person who would not get out a shotgun when I asked to cut his tree to shreds.

As I left the church, I sa magnolia trees in the distance. I approached a house, No dog in sight...knocked on the door and an older man answered. So far so good..No shotgun. When I stated my plea the man beamed, 'I'd be happy to0!'

He climbed a stepladder and cut large boughs and handed them down to me. Minutes later as I lifted the last armload into my car trunk, I said, 'Sir, you've made the mother of a bride happy today.

'No Ma'am' he said. 'You don't understand what's happening here!"
'What?,' I asked. 'You see, my wife of sixty-seven years died on Monday. on Tuesday I received friends at the funeral home, and on Wednesday...He paused.I saw tears welling up in his eyes. "on Wednesday I buried her.' He looked away. 'On Thursday most of my out of town relatives went back home, and on Friday - yesterdat - my children left.'
I nodded.
'This morning,' he continued, 'I was sitting in my den crying out loud. I miss her so much. For the last sixteen years, as her health got worse, she needed me. But now nobody needs me. This morning I cried, 'Who needs an eighty-six-year- old worn out man? Nobody! I began to cry louder. 'Nobody needs me!" About that time, you knocked, and said, 'Sir, I need you.'
I stood with my mouth open. He asked, 'Are you an angel? The way the light shone around your head into my dark living room....'

I assured him I was no angel.

He smiled. 'Do you know what I was thinking when I handed out those magnolias?'

'No.'

I decided I;m needed. My flowers are needed. why, I might have a flower ministry! I could give them to everyone. Some caskets at the funeral home have no flowers. People need flowers at times like that and I have lots of them. They're all over the backyard. I can give them to hospitals, churches - all sorts of places. You know what I'm going to do? I'm going to serve the Lord until the day HE calls me home!

I drove back to the church, filled with wonder. On Patsy's wedding day, if anyone had asked me to encourage someone who was hurting, I would have said, 'Forget it! It's my only daughter's wedding, for goodness sake! There is no way I can minister to anyone today!'
But God found a way. Through dead flowers!
'Life is not the way its' supposed to be. It's the way it is. The way you cope with it is what makes the difference!'

If you have missed knowing me, you have missed nothing. IF you have missed some of my emails, you may have missed a laugh. But, if you have missed knowing my LORD and SAVIOR, JESUS CHRIST - you have just missed everything in the world!!!"

THURSDAY AGAIN - TRIED TO SKIP IT

I titled this blog "Thursday Again - Tried to Skip it" because all day yesterday it kept feeling like Friday - I think I even told someone to "have a nice weeked!"  Duh - think I am ready for the weekend and hopefully a trip to Dallas!!

Wow - was I embarrased today - but thankfully - through her husband, a great reader let me know that on my last blog I made a bad spelling error.  I was saying I wanted to take a poll - only I spelled it pole.  Thank you!!!!  Normally I edit the next morning and correct all of the errors (because I write so late at night) but I was so busy on Wednesday I failed to do so!  It is corrected now!!  Please let me know any time you see an error!!

I have received some great things I would love to share - but since my laptop isn't getting email yet  - I don't have access to all of it!

Don't you just love all of the fresh veggies?  I sure do!  My little garden is doing great - well it would be if it wasn't for the varmit that keeps biting into my tomatoes!  I think it probably a squirrel - so I have to pick them at the first hint of pink.  They are really making lots too.  I also picked a cucumber today - that Travis didn't know he had bought it when he bought the squash.  It also has been making but I have to pick it so early or it starts rotting at the end!  I didn't know "farming" was so hard!  My dad always had wonderful tomatoes, potatoes, squash and peas -- probably had so many tomatoes he didn't have to complain about a few lost ones!  I loved squash cooked the old fashion way - well the way my Mom did - no not fried - which is my favorite - but that is too much fat!!

Squash Casserole\(My Mom's way - which is delicious!!)

6 to 8 medium yellow crocked neck squash
1 Small onion, chopped into large pieces
Bread or Cracker crumbs
1 egg, beaten
1 tsp. salt
1/2 teaspoon black pepper
Small pat of butter (about 1 tablespoon)

Wash and cut the squash into large chunks and put in saucepan and cover with water.  Add chopped onion.  Bring to a boil until fork tender and remove from stove and drain.  Mash until only small pieces remain.  Add egg, salt and black pepper.  Add a few crushed cracker crumbs - about 2 to 3 tablespoons, and a small pat of butter. Sttir until well combined and pour into a 9 x 10 (or thereabouts) lightly sprayed casserole dish.  Sprinkle with a few additonal cracker crumbs. Bake at 350 degrees until set.  Now days I would add the following:
1 small jalapeno minced
1 garlic clove - either minced or pressed
1/8th tsp. cayenne pepper
Grated cheese to sprinkle on top

I promise it has more zip and taste - but I sure did eat a lot what Mom cooked too!  Enjoy!!!

I may have posted this once again - but with so many fresh tomatoes available - it is a wonderful side dish!   Now my boss claims this as his recipe - but actually both of us got it from Paula Deen's "The Lady & Sons" published in 1997, 1998 before she became the famous lady she is now!

TOMATO PIE
     (Serves 6 - large pieces)
4 tomatoes, peeled and sliced
8 to 10 fresh basil leaves, chopped
1/3 cup chopped green onion
Salt and pepper to taste (about 1 tsp. salt and 1/4 tsp. black pepper)
2 cups grated Mozzarella and Cheddar cheese (combined)
1 Cup mayonnaise (I use reduced fat)
One 9-inch prebaked deep dish pie shell
1 small jalapeno finely chopped (My addition and optional)
 1/8 tsp. cayenne pepper
Preheat over to 350 degrees.  Layer tomato slices, basil, onion and jalapeno in pie shell. Sprinkle on salt and pepper to taste.  Mix together grated cheese, cayenne peppe,r and mayonnaise. Spread on top of tomatoes, sealing well.  Bake for 30 minutes or until lightly browned.

Allow to cool for several minutes and slice into servings!!!  
THIS REALLY IS DELICIOUS!!!!

Now Farmer's market will be open again on Saturday - get some veggies and try these delicious recipes!!!

THE ROASTED CHICKEN PASTA SALAD - ONE WORD - DELICIOUS

Good evening. I think I have pictures posted from my Iphone! Everyone was so hungry I did not get an opportunity to make a picture of the salad tonight - but it should have fed at least 10 - not so -- between Travis and Michelle - there is enough left for T to take some to work for lunch and for me to give my Mom some! It was really good!! I served it with sliced fresh tomatoes and toasted Jalapeno Cheese Sourdough bread I made on Sunday!

I just have to get my browser problem settled so I can copy great articles and send to you! But until then, we shall have to COOK!!

But first - do you know that water actually fills you up, cleans the kidneys so the liver can do what it is designed to which is to - well it does lots of jobs - but one thing it does is speed up our metabolism. I am trying so hard to drink a gallon a day - not there yet!!

On June 20, the executive committees (past and incoming) will come to the house for our combined meeting. I have been thinking and thinking and thinking what I would like to serve - not a full meal but most of these ladies are widowers, so I am sure they would appreciate not having to go home to eat -- so any ideas???

I am thinking I might do the little Hot Ham Sandwiches and then one more thing. I know I have posted these some place long ago - but they are worth making a debut again.

HOT HAM SANDWICHES

1/2 Cup Margarine (I use butter - remember this was written in 1997 - before we knew how bad margarine is for us!)
1 Tablespoon Poppy Seed
1 Tablespoon Onion Flakes
1/4 Cup Mustard
12 (12 small buns (Potato dinner rolls or Pepperidge Farm Small Rolls for smaller sandwiches)
Ham, thinly sliced, or "shaved"
Swiss cheese, thinly sliced

Melt margarine (butter) in saucepan and add poppy seeds, onion flakes and mustard. Spread split buns (or rolls) with butter mixture and insert one portion of ham and cheese into each bun. Wrap in foil. (Freeze or refrigerate at this point if desired!) Bake 15 minutes at 350 degrees or longer for chilled or frozen sandwiches).

These are really good and satisfying for a light meal - they always disappear quickly!!

I have to go to Penzey's in Dallas this weekend. I am almost out of Fresh Ground Black Pepper and if you ever try it -- nothing else is good enough! Penzey's is so easy to get to - take 635 north off US 80 and drive to Preston Road exit. Take a left and after crossing over 635, look to the right and the first drive going into the first shopping center is where it is!!

COMPUTER PROBLEMS AND GOOD BREAD PUDDING

Good evening! I know a few computer "whiz people" but I am sure not one of them! I went in and deleted Suddenlink - because all of my mail has been directed to jc@joncarole.com, but I am still not getting it on this laptop! Just can't seem to get the settings correct! Oh well - did find out I can post this from a remote computer or most likely even my phone!

We need rain so bad - we should all pray for rain! This afternoon I was on my way to Emerald Bay for a Pilot meeting (will be having a lot of those in the next two weeks -- it is end of year and we must make division plans for next year - and as incoming President and must try to attend all of them)but as I was saying on my way to E B it started to rain and by the time I reached the bridge just befor E B, it was raining so hard I could not see. Of course by the time I got to the house I was going - it had stopped!

I am really wondering if any of you have made the Sour Dough that I gave you the recipe for a couple of weeks ago???? Well I hope you did because I have a great - well actually two recipes for you tonight! Oh course on this first one, I suppose you could go to Brookshires or Fresh and buy a loaf of Sour Dough Bread.

SOURDOUGH BREAD PUDDING

5 Cups sourdough bread cubes
3 Cups low-fat milk
4 Eggs
2 Egg Yolks
1 Cup Sugar
1 Tablespoon vanilla
1/4 Tsp. almond extract
1/4 Tsp. ground nutmeg
1/2 Tsp. ground cinnamon
1/e Cup raisins
1/2 Cup shredded coconut

Preheat over to 350 degrees. Lightly grease 2-quart casserole dish.

Place bread cubes in prepared casserole.

In large bowl beat together milk, eggs, egg yolks, sugar, vanilla, almond extract, nutmeg and cinnamon. Pour over bread cubes. Stir in remaining raisins and coconut.

Bake in a preheated 350 degree oven until knife inserted near center comes out clean, about 50 to 60 minutes.

Serve with whipped cream and a dash of cinnamon, if desired.

Note: For a puffier pudding, refrigerate several hours or overnight before baking.

Servings: 8

Now let me tell you how I changed: First - I only used 4 eggs (no extra yolks), was out of almond extract, so I omitted, increaded nutmeg to 1/2 tsp. and cinnamon to 1 teaspoon and omitted coconut.

It was delicious - or so I thought the bite I took was, and Travis and Michelle said it was and Mom said it was delicious. Only funny - she first said "That bread pudding was delicious, only I've never had it made with crutons!" I explained I cut all of those cubes (electric knife is wonderful for that!*)from my homemade sourdough bread! TRY IT!!!

The next recipe is one I made up while getting the raw dough in the pans to rise and then cook.

JALAPENO CHEESE SOURDOUGH BREAD

Take the portion that you would put into a pan and press it out, sprinkle with cheese, a few jalapenos (I love the Penzey's freeze dried for this)a few sprikles of either fresh pressed garlic or dried minced garlic (from Penzey's is best) and then roll the bread to fit pan. Let it rise and cook as directions say. But - test these bread loafs for doneness before taking up! I tell you this because the other day I took it up before it was done through and through!

Well that is what I have for you tonight! I need to try and get some rest -- tomorrow I get the third Lumbar epidural for this horrible back pain! Hopefully I will feel so good tomorrow evening I can be back with you!

Wednesday, May 25 -- I can't believe it has been that long!! Between my back, the pain,the shot and probably a little laziness - I have slacked and I apologize! It certainly wasn't that I didn't have anything to say or recipes to share.. I just looked back to edit this and there was a blog that had been written on June 6 that had not posted (it is now!) so I was quite as bad as I thought!!!

I have the TV on and it is that show about "The biggest Loser" and this guy weighs over 500 lbs. I am sure that is possible even though I can't even imagine.

I am still having email problems and can't get my email at home on my laptop - so I can't really copy anything and share it. But I can share a couple of really cute pictures and show you what I have been doing besides cooking! Oh well - I am about to be unreachable -- I left my charger cord at work!! Ok - tomorrow night I will down load pictures and share with you!

Lately - at least once a week I have to work up my Sour Dough bread - and I think Travis is getting tired of it - but I have decided to versify! Yesterday I made Cinnamon with Raisin and one with cheese, garlic and jalapenos! Anyone want a loaf of Sour Dough Cheese Jalapeno bread??

Yesterday I went to Sam's to pick up a huge bag of rice for Sunshine Camp and also bought a Rotisserie chicken to make a delicious sounding Pasta salad. I went to Fresh to buy Whole grain bowtie pasta so I could make it. Then tonight I had one more Pilot CLub Division meeting - so when I got home - it was too late to start dinner` Here is the recipe that I am hoping I can make tomorrow!

ROASTED CHICKEN AND BOW TIE PASTA

3 Cups uncooked farfalle (bow tie pasta) about 8 ounces
1/3 cup fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons extra virgin olive oil*
1 tablespoon stone-ground mustard
2 teaspoons sugar
1-1/4 tsp. salt
1/2 teaspoon fresh grounde black pepper (Penzeys is best!!)
1-1/2 tsp. rice vinegar
2 cups shredded cooked chicken breast (about 2 breasts)
1-1/2 cup seedless red grapes, halved
1 cup thinly diagonally cut celery
1/3 cup finely chopped red onion
1/3 cup coarsly chopped walnuts, toasted
3 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley

Cook pasta according to package directions, omitting salt and fat; drain. Cool completely.

Combine orange juice and the next 7 ingredients (orange juice through rice vinegar) in a large bowl, stirring with a whisk to combine. Add pasta, chicken, grapes,celery, red onion, walnuts, chives, and parsley. Toss gently to combine.

It sounds delicious and I now have everything to make it!!

*Olive Oil - Tip: I just found the most wonderful selection of EVOO (Extra Virgin Olive Oil) - Marshalls! Fabulous Olive Oils at a reduced price!!!"

Tonight we ate dinner at Coyote Sams! That place has grown on me and I love it! IT has so much character and if you are saying, "But I don't really like the food", ask yourself if you have ever had the Chicken Avacado sandwich (my sister and I love to share it) or the Smoked Brisket Salad. The green salad is topped with this fabulous smoked brisket! Travis and I shared it and both left full! I ordered the Mango Vinegarette and Travis ordered ranch. After one bite, he ask for some barbeque sauce! Do yourself a favor and try it!!

WHAT have you been doing for the past three weeks? I am hoping you have been looking for opportunities to serve others? It frees you from feeling unworthy, it gives you energy and most importantly, it pleases God. Tonight at a Pilot Club division meeting one of the older ladies said she had been helping this older (even than her) lady to get moved and she had also helped her sister get a new window unit for her house. Of course she said her sister and husband probably had 85 cents of every dollar they ever earned. She said they could have central air! THen she said, "we only go through this life once and we should enjoy part of it!"

MONDAY - A GOOD MEAL AND TIME TO REFLECT

Good evening! Just finished half-way watching 'The Bachlorette' - such a silly show and I really think it is scripted! But just fun escape! I said half-way
because dinner was ready just before it started, ate, then had to clean up - even though Travis did a lot of it -- but I wanted it really fixed! My computer is so messed up again - everytime I hit the enter key it pops up asking for a suddenlink password and I am not on Suddenlink - my blog is on joncarole.com??? Any ideas?

Tonight I cooked a pork loin that I had started marinating at lunch today. Ok - has anyone else had this problem? I have had two double ovens and both of them have not cooked properly in the bottom oven. They cook slower and it is very frustrating! Yesterday I tried cooking Sour dough bread in it and it took twice as long and the little pork loin that I cooked should have taken 27 minutes to reach 165 degrees and I'm not sure if I ever got it there! I am so disappointed!!
We also had fresh corn - grown in our own little garden - and a pea salad I invented because I wanted to use up the fresh tomatoes, sour dough bread toasted that had garlic, jalapeno pepper and cheese, fresh tomatoes, Noonday onions and cantalope! Now honestly - I did not eat the bread or pea salad - just don't want the calories! Thank goodness - these wonderful vegetables and fruits do not have any fat and not many calories --- otherwise summertime would be a tragedy to people who care how many calories they intake!

There are so many things you can do with fresh corn. Boil it and eat it off the cob or boil it and cut it off like my dad always did, or cut it off and make a wonderful creamed corn, or one of my favorites - shuck the corn - soak it in water for about 15 minutes and then put it on the grill and cook until tender and turning brown. It pulls the sugar out and is delicious.

Have you ever started to make a dish without a recipe - but knowing what it is suppose to have. Well this person who loves to tell someone how to cook - did that yesterday. We had some wonderful fresh peaches and my idea was to take about four of them and make a peach pie. Good idea - but with cling peaches, you don't get enough peach to make a good peach pie,so I decided to add about a cup of blueberries. I cut the peaches off, added the blueberries, added a cup of sugar, 1/3 cup flour and dash of salt and about 1 cup water. Put them on the stove and started to cook. Then I thought "why didn't I put the sugar, salt, and water on the stove, start it to boil, add the peaches and cook for a little while, add the blueberries, and then either add the flour or better yet about 3 tablespoons cornstarch to cold water, stir well and then slowly stir into the fruit and let it thicken. So simple and I knew that but I had just made a berry cobbler that you did what I did - but you know what Travis said it was good and ate two pieces that evening. So all was not lost - but it could have been prettier - with the fruit showing up better! Oh well!

LET'S COOK AGAIN

You probably decided I was never going to adding to my blog again - but lots has been going on! Shopped on Saturday for things I thought I needed for the Pilot Club's party we were hosting on Tuesday night, worked in yard and basically stayed busy all day. On Sunday - life took a very unwanted dramatic change --- my back had a horrible pain and all of the old suffering came back. But - remember I said there was a party planned for Tuesday night -- so I took the Celebrax - and went to work on Monday - shopping - for all things - napkins! Ever tried to find 20 wonderful napkins that don't wind up costing $200.00. Try it and you will get a leg workout that they won't forget for a few days. Finally found some wonderful (and cheap) bandanas that I was able to work with - and everyone thought they were perfect napkins!! So that is my first tip of the day - be creative -- find something inexpensive and make it work with all of your other accessories! On Tuesday the cooking began - we promised hamburgers - but didn't promise chips or french fries and beans. So - we had Cornbread salad, Pretzel salad, Brie with a sauce made with blueberries, raspberries, and blackberries. Made me wish for hot biscuits!! Oh for an appetizer along with the brie, we also had watermelon and fresh berries. For dessert - it was homemade crepes with either strawberries or bananas, whip cream (the real thing),and apricot/rum sauce. I had tablecloths, silver, china, and crystal (even outside) so I think I met the challenge!!!

One of the most gorgeous dishes was the Baked brie with fruit sauce. I will share it now:

SO VERY BERRY BRIE

1/2 cup sugar
2 tablespoons waterBagel
1/2 cup fresh or frozen raspberries, thawed (if frozen)
1/2 cup fresh or frozen blackberries, thawed (if frozen)
1/2 cup fresh or frozen blueberries, thawed (if frozen)
1 tablespoon corn starch
2 tablespooons water
1 - 8 oz. round Brie cheese, halved horizontally
Bagel and/or pita chips

1) In a small saucepan, heat the sugar and water until sugar is dissolved. Add the berries. Bring to a boil. Reduce the heat ; simmer, uncovered for three minutes. Combine the cornstarh and cold water until smooth. Gradually stir into pan until combined. Cook and stir for 2 minutes or until thickened. Remove from heat and let stand for 10 minutes to cool!

20 Place the bottom half of cheesw in an ungreased ovenproof serving dish (Pie pan works perfectly); pour 1/2 cup berry mixture over cheese. Top with remaining cheese and berry mixture on top.

3)Bake, uncovered at 4000 degrees for 8 to 10 minutes or until cheese is softened. Serve with chips.

This is so beautiful and really delicious. THe sauce tastes like a wonderful berry jam!!!

Have I told you that I am so excited? Last week I received a new cookbook, 'Quick and Easy Autumn' from Gooseberry Farms and - on page 209 my recipe for Shredded Pork Sandwiches is published. Has my name, Tyler, Texas is there with the byline: "Everyone will love these savory sandwiches. They're simple to fix, but that is your little secret!"

I know I published these a long time ago but here it is again!

Shredded Pork Sandwiches

3 to 4 thick-sliced boneless pork chops
1 onion, sliced
1 tomato, chopped
4 oz. can sliced mushrooms, drained
2 tsp. chipotle seasoning
1/2 cup barbeque sauce
1/4 cup brown sugar, packed
1/2 tsp. salt
8 whole wheat buns, split

Place pork chops in slow cooker; top with onion, tomato and mushrooms. Stir chipotle seasoning into barbeque sauce and spoon over pork chops. Cover and cook on high setting for one hour. Reduce to low setting and cook for about 8 hours, until very tender. Remoove pork chops and shred with a fork; set aside. Pour juices and vegetables from slow cooker into a suacepan; stir in brown sugar and water. Stir in brown sugar and salt. Bring to a boil; simmer for several minutes, until slightly reduced. Stir in shredded pork; heat throughly. Serve on buns. Serves 6 to 8.

Here is a tip: Warm sandwich buns for a crowd...easy! Fill a roaster with buns, cover with heavy-duty aluminum foil and cut several slits in the foil. Top with several dampened paper towels and tightly cover with more foil. Place in 250 degree oven for 20 minutes. Rolls will be hot and steamy!! (from Gooseberry Farms)
