Wednesday, May 25 -- I can't believe it has been that long!! Between my back, the pain,the shot and probably a little laziness - I have slacked and I apologize! It certainly wasn't that I didn't have anything to say or recipes to share.. I just looked back to edit this and there was a blog that had been written on June 6 that had not posted (it is now!) so I was quite as bad as I thought!!!
I have the TV on and it is that show about "The biggest Loser" and this guy weighs over 500 lbs. I am sure that is possible even though I can't even imagine.
I am still having email problems and can't get my email at home on my laptop - so I can't really copy anything and share it. But I can share a couple of really cute pictures and show you what I have been doing besides cooking! Oh well - I am about to be unreachable -- I left my charger cord at work!! Ok - tomorrow night I will down load pictures and share with you!
Lately - at least once a week I have to work up my Sour Dough bread - and I think Travis is getting tired of it - but I have decided to versify! Yesterday I made Cinnamon with Raisin and one with cheese, garlic and jalapenos! Anyone want a loaf of Sour Dough Cheese Jalapeno bread??
Yesterday I went to Sam's to pick up a huge bag of rice for Sunshine Camp and also bought a Rotisserie chicken to make a delicious sounding Pasta salad. I went to Fresh to buy Whole grain bowtie pasta so I could make it. Then tonight I had one more Pilot CLub Division meeting - so when I got home - it was too late to start dinner` Here is the recipe that I am hoping I can make tomorrow!
ROASTED CHICKEN AND BOW TIE PASTA
3 Cups uncooked farfalle (bow tie pasta) about 8 ounces
1/3 cup fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons extra virgin olive oil*
1 tablespoon stone-ground mustard
2 teaspoons sugar
1-1/4 tsp. salt
1/2 teaspoon fresh grounde black pepper (Penzeys is best!!)
1-1/2 tsp. rice vinegar
2 cups shredded cooked chicken breast (about 2 breasts)
1-1/2 cup seedless red grapes, halved
1 cup thinly diagonally cut celery
1/3 cup finely chopped red onion
1/3 cup coarsly chopped walnuts, toasted
3 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
Cook pasta according to package directions, omitting salt and fat; drain. Cool completely.
Combine orange juice and the next 7 ingredients (orange juice through rice vinegar) in a large bowl, stirring with a whisk to combine. Add pasta, chicken, grapes,celery, red onion, walnuts, chives, and parsley. Toss gently to combine.
It sounds delicious and I now have everything to make it!!

Tonight we ate dinner at Coyote Sams! That place has grown on me and I love it! IT has so much character and if you are saying, "But I don't really like the food", ask yourself if you have ever had the Chicken Avacado sandwich (my sister and I love to share it) or the Smoked Brisket Salad. The green salad is topped with this fabulous smoked brisket! Travis and I shared it and both left full! I ordered the Mango Vinegarette and Travis ordered ranch. After one bite, he ask for some barbeque sauce! Do yourself a favor and try it!!
WHAT have you been doing for the past three weeks? I am hoping you have been looking for opportunities to serve others? It frees you from feeling unworthy, it gives you energy and most importantly, it pleases God. Tonight at a Pilot Club division meeting one of the older ladies said she had been helping this older (even than her) lady to get moved and she had also helped her sister get a new window unit for her house. Of course she said her sister and husband probably had 85 cents of every dollar they ever earned. She said they could have central air! THen she said, "we only go through this life once and we should enjoy part of it!"
Enjoy life - but remember those that need your help to be able to enjoy it! Have a great tomorrow and God's will - I will be back tomorrow!!
